  • smoked chicken leg – 1 pc.
  • fresh cucumbers – 2 pcs.
  • Korean carrots – 100 g
  • prunes – 100-150 g
  • mayonnaise

How to make Obzhorka salad from mushrooms and prunes:

1. Cut the mushrooms into slices and fry.

2. Take a smoked leg, remove the meat from the bones, tear it into small pieces.

3. Chop fresh mountaineers into strips.

4. Cut the washed prune pulp into strips.

5. Lay out the salad in layers in the following order, remembering to grease each layer with a thin mayonnaise mesh: mushrooms, chicken, carrots (don’t forget to drain excess liquid), prunes, cucumber. I don’t recommend greasing the cucumber, but decorating it with olives and mushrooms.

One of the most popular salads in its classic version is Obzhorka with boiled chicken, fried carrots and champignons, topped with pickled cucumbers :)

Ingredients

  • chicken leg 300 g,
  • carrots 1 pc.,
  • champignons 100 g,
  • onion 1 pc.,
  • pickled cucumbers (salted) 2 pcs.,
  • garlic 2 cloves,
  • vegetable oil for frying,
  • mayonnaise 2 tbsp. l.,
  • salt and pepper to taste.

Recipe for “Obzhorka” salad with chicken

  1. Cook the chicken in salted water. Cool in the broth (this will make the chicken more tender). Remove the fillet from the bone and cut it into cubes.
  2. Cut the mushrooms into slices and fry in a small amount of vegetable oil until tender. Remove from the pan to cool.
  3. Peel the carrots, three on a coarse grater. Fry the carrots in the same frying pan in the mushroom oil for 3-5 minutes. Place in another bowl.
  4. Peel the onion and chop finely. Heat slightly until translucent (no more than a minute), adding a little more oil if necessary.
  5. Peel and finely chop the garlic. We send it to the hot onion.
  6. Three pickled/salted cucumbers on a grater.
  7. Lay out the salad in layers, alternating layers with mayonnaise and pepper:
    1 - chicken,
    2 - fried carrots,
    3 - fried mushrooms,
    4 - bow,
    5 - cucumbers.
