  • You can also use lemon in the recipe, then the benefits of the final product will be even greater. So, you need to boil the flowers for two hours. We take 300 ml of water per 100 flowers. Infuse the decoction for at least 12 hours, then filter. To the remaining broth add lemon juice (half or whole, to taste) and half a kilo of sugar. Mix everything and boil for another two hours.
  • If you really want to get honey, and not jam, then there is a recipe without heat treatment, using natural honey. To do this, take the entire dandelion flowers, with stems, and grind them in a blender. Then they mix it all with natural flower honey. The concentration should be 1.5 kg of honey per thousand flowers. You can take a little less dandelions if you don’t like the bitter taste. It is useful to add 50 grams of pollen to the resulting composition. Thus, you will get a real elixir of health.
  • The jam will be more flavorful if prepared according to the following recipe. Take 300 dandelion flowers, half a liter of clean water, 15 leaves of cherry, currant, raspberry or other aromatic fruit leaves, a kilogram of sugar and lemon. At this time, you need to prepare the sugar syrup itself separately. To do this, use 100 ml of water per 1 kg of sugar. When the dandelion decoction has infused, it should be strained and mixed with hot sugar syrup. All together you need to boil again for 20 - 25 minutes.
  • The original recipe also involves the use of fragrant herbs, which will give the product a special aroma and incredible benefits. To do this you need half a liter of water, 400 grams of dandelion flowers, 1.2 kg of sugar, half a lemon, or rather the juice from it, and herbs. Choose any herbs that you like. This could be raspberry or cherry leaves, as we described earlier, or it could also be branches of lemon balm, mint, etc. First, cook the sugar syrup. This is one of the most popular recipes that does not require a long and complicated preparation process.

Making dandelion honey

Making honey is quite simple. Necessary:

  1. fill a two-liter jar with flower petals;
  2. pour the contents of 2 liters of water;
  3. leave the mixture to infuse for 24 hours;
  4. strain, squeeze out the infusion;
  5. dilute the mixture with the juice of two lemons;
  6. add 2.5 kg of sugar.

Place the finished mass in an enamel pan and cook over low heat, stirring occasionally, until it thickens. Honey can be poured into jars, and after it has cooled, close them.

Preparing for the winter

To make 1 liter of dandelion jam you will need 1000 ml of filtered water, 1000 g of sugar, fresh juice of one lemon and approximately 250-300 dandelion heads.

Water is poured into a pan and placed on the stove. The flowers of the medicinal plant are poured there and boiled for 60 minutes. Next, you need to remove all the flowers from the resulting mixture and add sugar. The broth will be put back on the fire and boiled for 60 minutes. 5-10 minutes before the end of cooking, add lemon juice. The resulting jam can be used at any time of the year. It is used internally to treat joint diseases and other diseases.

Nectar for health

A similar product can be used as a healing potion and replace regular sugar. The raw materials for its preparation are closed dandelion buds. Accordingly, they need to be collected only at night or at dawn, but before 6 o’clock in the morning. To prepare nectar you need:

  • place the buds in a liter jar in layers, covering them with a 0.5 cm layer of sugar every 3 cm of raw material;
  • fill the jar three-quarters full, crush its contents a little;
  • Close the container with a lid and leave in a dark place for about a week.

After this time, you will receive nectar of a rich amber color with a pleasant smell. By consuming a teaspoon of it per day, you can get a boost of energy and strength and improve your appetite.

Candied Dandelion Recipe

To prepare candied fruits, you need to prepare 250 g of fresh inflorescences, 1.5 kg of sugar and 1 whole lemon:

  1. First, you need to thoroughly wash the inflorescences and fill them with cold water for 3 hours (at this time the water needs to be changed so that the flowers do not become bitter).
  2. After three hours, you need to mix the flowers with grated lemon.
  3. Next, prepare the syrup by diluting sugar in 1.5 tbsp. water and heating it on the stove until it boils.
  4. After the syrup has cooled, you need to pour it into a container with dandelions and let the mixture brew for an hour.
  5. Then you need to place the container with all the contents on the stove and bring to a boil.
  6. After this, you must again leave the mixture to infuse for an hour and repeat the heating-infusion cycle seven more times.

When the cooking process is complete, you need to lay out the dandelions in a thin layer on a dry surface, such as a plate or baking sheet, and let them cool thoroughly.

Traditional dandelion jam

The recipe requires approximately 400 inflorescences, 1 kg of granulated sugar and 1 liter of water. Having prepared all the ingredients, you need:

  • carefully sort through the raw materials, discarding all low-quality inflorescences;
  • put the dandelions in an enamel pan and fill them with water;
  • place the container with the contents on the stove and heat under the lid until boiling;
  • remove the mixture from the stove and wait until it cools;
  • strain the infusion, add sugar, put on low heat for 20 minutes;
  • When the liquid boils, remove the foam from it.

When the jam is ready, you can immediately pour it into clean jars and close them after cooling.

Cold dandelion jam recipe

To prepare it, you need to take about 1 kg of inflorescences, sort and peel them, and then grind them in a meat grinder. The resulting mass should be covered with granulated sugar (1.5 kg) and let it brew until the sugar dissolves. The mixture should infuse for 3 days. At this time, you need to stir it constantly using a wooden spoon. After 3 days, the mass can be poured into clean jars, closed with a lid and placed upside down for 12 days in a dark, cool place. When the jam is ready, wrap the jars in paper and tighten with a rubber band.

The finished product should be stored in the refrigerator. Its consumption is beneficial for the liver and the prevention of infectious diseases.

Jam with citric acid

According to this recipe, you need to prepare about 300 selected inflorescences, 1 kg of granulated sugar, 2 tbsp. cold water and 0.5 tsp. citric acid.

  1. First you need to make a syrup from sugar and water, and then bring it to a boil.
  2. Add pre-washed flowers to the boiling solution, mix them and wait until the whole mass boils.
  3. After boiling, cook the mixture for 20 minutes over low heat.
  4. At the end of cooking, add citric acid to the jam, which can be replaced with the juice of half a fresh lemon.
  5. When the jam boils, remove it from the stove and let it brew for 24 hours.

The infused mixture should be strained using clean gauze, and the remaining liquid should be simmered over the fire for 20 minutes.

How to make dandelion syrup

Syrup is also prepared from yellow inflorescences. To do this, selected clean flowers are placed in a two-liter jar in layers, alternating plant materials with granulated sugar. The ratio of dandelions to sugar should be 1:2. The top layer should be sugar. After filling the jar, its contents are compacted and:

  • close with a lid, leave in a warm, bright place for 14 days, then filter and store the resulting liquid at a low temperature;
  • or they compact the contents of the jars more firmly, press them down with a weight, cover the container with gauze, and leave them in a cool, dark place for 3-4 months.

This syrup is an effective remedy for colds and various respiratory viral diseases.

Dandelion nectar with May honey

To prepare nectar, you need to take 100 pieces of inflorescences and grind them using a blender or meat grinder. The resulting mass should be poured with honey of a liquid consistency. After thorough mixing, the nectar can be placed in clean jars and stored in the refrigerator.

Traditional nectar recipe

For such nectar you need to prepare 0.5 kg of inflorescences and 1 kg of sugar. Flowers must be thoroughly washed and dried before use. After this, they must be placed in jars, alternating plants with sugar. Then the glass containers should be tightly closed and left warm in the light for fermentation. Preparation of the nectar will take two weeks. After this time, the mass must be strained and squeezed out using gauze. It is recommended to store the finished product in closed jars at a temperature of no more than 15°C.

Herbal nectar recipe

The recipe requires 2 tbsp. water, 0.4 kg of dandelions, 1.2 kg of sugar, juice squeezed from half a lemon, currant, raspberry or cherry leaves, lemon balm sprigs. When all the ingredients are collected, you need:

  1. boil the syrup in an enamel container;
  2. sort out and clean the inflorescences from greenery;
  3. add flowers to syrup and cook, stirring, for up to 20 minutes;
  4. at the end add squeezed lemon juice;
  5. To give the nectar an unforgettable aroma in 5 minutes, you need to add several dry cloves, up to 10 leaves of fruit bushes or trees, and a couple of branches of lemon balm.

Removed from heat and cooled, strain through cheesecloth and pour into glass containers.
