Women who follow a variety of diets often suffer from the inability to eat buns, cakes or cookies. It is baking that plump representatives of the fairer sex love most, and any diet becomes a real test for them. The Dukan diet is absolutely wonderful in this regard - it not only allows, but even welcomes baking. The only condition is that there must be cookies.

In order for the cookies to fully comply with the principles of the famous nutritionist, wheat flour, any fat, butter and sugar should not be placed in the dough. Instead of flour, bran (oat and wheat) is used, natural yogurt or cottage cheese is used instead of fat, and sugar substitutes are used instead of sugar. This could be FitParad, Sukrazit or dry plant powder “stevia”, which is also called “honey grass”. You can completely do without a sweet substitute, then the cookies will turn out to have a neutral taste, like regular bread.

Soft ginger cookies according to Dukan

The Dukan diet is good because it allows you to lose weight without denying yourself almost anything. Even sweet pastries were not banned. Store-bought pastries, waffles, cakes and other sweets are not suitable; Dukan cookies are prepared according to special recipes and are low-calorie and healthy. This dessert will not ruin your figure. It can be included in the menu even at the most severe stage of the Dukan diet called “Attack”. It is only important not to use products prohibited at the appropriate stage of the diet for baking.

Cooking features

The Dukan diet is low carbohydrate. During its observance, the consumption of foods containing animal fats and large amounts of carbohydrates is prohibited. Flour, butter, and sugar are permanently prohibited and cannot be included in the Dukan cookie recipe. At the first stage, even yolks, vegetable oil and starch are allowed only in limited quantities. At subsequent stages, the list of permitted products expands, first it includes goji berries, flax seeds, vegetable oil and corn starch, later fruits (except bananas) and berries (except cherries and grapes) are included in the diet. The cookie recipe should be chosen based on what stage of your diet you are at. To ensure that the cookies meet the requirements of the Dukan diet and are tasty at the same time, you must adhere to some recommendations:

  • At the “Attack” stage, you should consume 1.5 tablespoons of oat bran per day, at the “Alternation” and “Fixation” stages - 2 tablespoons, after - three. Dukan cookies are often prepared using oat bran. The amount of baked goods that can be eaten during the day is calculated taking into account the consumption rate of the specified product at a specific stage of the diet.
  • Instead of sugar, use a low-calorie sweetener. Add it to taste, the amount depends on how sweet a particular sugar substitute is. The form of release of the sweetener can also be different. If it is in tablets, they should first be crushed into powder or diluted with a teaspoon of warm water.
  • The bran is ground in a blender to form flour. This allows you to get a smooth dough. If you want the cookies to crunch, you should grind the bran less carefully - just crush them a little with a potato masher.
  • To prevent the cookies from burning during baking, place the dough on a silicone mat or parchment paper. It is not advisable to use oil. The batter can be poured into silicone molds, from which baked goods can be easily removed.
  • Some recipes call for frying the cookies in a frying pan. Kitchen utensils with a high-quality non-stick coating are suitable. Lubricate it with a napkin soaked in oil or a culinary brush.
  • Low-fat dairy products are used for preparing products.

When preparing Dukan cookies, do not forget about the possibility of adding berries or pieces of fruit, flax seeds, ginger, cocoa powder and various flavors. This will allow you to get a confectionery product with a new taste.

Classic Dukan oatmeal cookies with kefir

  • oat bran - 40 g;
  • low-fat kefir - 40 ml;
  • chicken egg - 1 pc.;
  • salt - on the tip of the knife;
  • sweetener - to taste.

Cooking method:

  • Grind oat bran in any way convenient for you.
  • Grind sweetener tablets into powder and mix with bran.
  • Break the egg into a bowl, add salt, and beat with a whisk.
  • Add kefir to the egg, beat again until the mixture becomes homogeneous.
  • Pour the egg-kefir mixture into a container with bran, mix thoroughly.
  • Spoon the dough onto the silicone mat, leaving at least 2 cm between the cookies. Flatten slightly with a spoon.
  • Place a baking sheet with dough in it.
  • Bake for 12–15 minutes depending on the size of the items.
  • Remove the pan from the oven. Let the cookies cool slightly, remove them from the mat and place them on a plate.

These cookies can be consumed at any stage of the Dukan diet.

Crispy cookies with flax seeds according to Dukan

  • oat bran - 60 g;
  • wheat bran - 45 g;
  • flax seeds - 5 g;
  • chicken egg - 2 pcs.;
  • water - 20 ml;
  • olive oil - 5 ml;
  • baking powder for dough - a large pinch;
  • salt - on the tip of the knife;
  • sweetener - to taste.

Cooking method:

  • Pound the bran well or grind it using a blender or coffee grinder.
  • Break the eggs, separating the yolks from the whites. All you need is whites.
  • Beat the whites with a whisk, then add butter, water and salt to them, beat again.
  • Grind the sweetener into powder and combine with bran. Add baking powder and flax seeds, stir.
  • Combine the protein mass with the dry mixture, leave for 15 minutes for the bran to swell.
  • Wetting a teaspoon with cold water, place the dough on a baking sheet, first laying parchment paper on it. The cookies will increase in size during baking, so leave some space between them.
  • Preheat the oven to 200–220 degrees, place a baking sheet with dough in it.
  • Bake for 15–20 minutes.

All that remains is to cool the cookies, remove them from the baking sheet and enjoy their taste. Such cookies can be included in the menu, starting from the “Alternation” stage.

Cottage cheese cookies according to Dukan

  • low-fat cottage cheese - 0.2 kg;
  • chicken egg - 1 pc.;
  • oat bran - 100 g;
  • baking powder for dough - 5 g;
  • lemon zest - 5 g;
  • sweetener - to taste.

Cooking method:

  • Rub the cottage cheese through a sieve or beat with a blender.
  • Break the egg into the cottage cheese and grind until the mixture is homogeneous in consistency.
  • Dilute the sweetener in a teaspoon of warm water, add to the curd mass, stir.
  • Separately, grind the bran to flour, combine it with baking powder and lemon zest.
  • Pour the bran into a container with the curd mass. Mix thoroughly.
  • Form the dough into walnut-sized balls, flatten them, and place them on greased parchment or a dry silicone mat.
  • Place the baking sheet with the curd dough in the oven preheated to 180 for 20 minutes.

These cookies can be consumed at any stage of the Dukan diet, but in limited quantities. The exact serving size depends on how much bran you need to consume at any given stage.

Dukan cookies without bran

  • corn starch - 100 g;
  • chicken egg - 3 pcs.;
  • skimmed milk powder - 50 g;
  • sweetener to taste.

Cooking method:

  • Mix dry skim milk with starch.
  • Separate the whites from the yolks.
  • Add the yolks to the dry mixture and grind until smooth.
  • Add sweetener, mix thoroughly.
  • Beat the egg whites into a stiff foam, add them to the dough, and stir carefully.
  • Pour a tablespoon of dough into silicone molds.
  • Preheat the oven to 180 degrees.
  • Place the molds with the dough on a baking sheet and place it in the oven for 20 minutes.

These cookies turn out tender and airy. The recipe can be used starting from the second stage of the diet. Using the amount of ingredients indicated in the recipe, you will bake sweets that will last for 3-4 days.

Cooking this Dukan cookies Doesn't even require a mixer!

So, let's begin. Let's heat up the milk. Pour yeast and a couple of crushed sugar tablets into it. Leave for 10 minutes

In a separate cup, mix all other ingredients. Mix well.
Pour milk into the dough and knead. It's better to do it by hand.

Leave in a warm place for 30 minutes, the dough will rise slightly.
Place the risen dough by the tablespoon on a baking sheet. I do this with a cooking bag - it turns out more neatly.

Place the cookies at a short distance; they will rise while baking.

Place in the oven at 180 C for 15 minutes. Be careful not to burn!

Then we open the oven slightly and keep it for another 10 minutes, and then we take out the cookies.

The top is golden brown and the inside remains soft.

Are store-bought cookies ok?

The strict restrictions of the Dukan diet do not make it possible to run to the nearest supermarket to buy a pack or two of your favorite cookies for evening tea. Carbohydrates, fats - in this weight loss system they are prohibited, which also applies to traditional baking. Fortunately, there are many recipes for diet cookies that you can bake yourself and complement the strict menu during the Attack and Cruise stages.

Starting from Stabilization, dried pieces of fruit (except bananas), yogurt and milk with a fat content of up to 1.5% are allowed to be added to homemade cookies.

  1. Almost every Dukan cookie recipe contains oat bran. This is understandable - regular flour cannot be used for baking, but bran does an excellent job as the main ingredient. And if you love oatmeal cookies in everyday life, then you will be especially pleased to lose weight on Dukan.
  2. To obtain a dough of uniform consistency, the bran is ground to a powder. Cookies with whole bran added to the dough have a grainy texture and become crispy.
  3. Diet cookies are baked in the oven on a sheet of special paper. This way you can do without additional application of oil to the frying surface.
  4. Some recipes call for cooking the cookies in a frying pan, in which case use a paper towel moistened with olive oil. Use this napkin to grease the pan before adding cookies for frying.
  5. Diet cookies can be prepared in silicone muffin tins. We especially recommend this method when the dough turns out liquid and can spread on baking paper.

What you will need:

  • oat bran - 1.5 tbsp. l.
  • boiled water - 1 tbsp. l.
  • egg - 1 pc.
  • baking powder - 1/3 tsp.
  1. Grind the bran into flour.
  2. Separate the yolk from the white.
  3. Combine dry products, mix with water and yolk. Wait until the bran swells.
  4. Beat the whites into a strong foam and add to the main mixture.
  5. Place a tablespoon of cookies onto special baking paper, which is placed on a baking sheet.
  6. Cooking time - from 15 to 20 minutes at 180 degrees.

This recipe can be used for Cruise: the amount of bran is increased to 2 tbsp. l. and add 1 tsp to the dough. olive oil.

For Cruise

Ingredients:

  • oat bran - 6 tbsp. l.
  • - 3 tbsp. l.

  • flavorings (vanilla, ginger, cinnamon) - to taste
  1. Mix all dry ingredients into a homogeneous mixture.
  2. Pour in kefir, wait 20 minutes until the bran swells.
  3. If the dough turns out thick, kefir can be added until the consistency of thick sour cream is obtained.
  4. Bake these cookies in a hot oven (200 degrees) for 20 minutes.

The resulting cookies should last you for 3 days, since the amount of oat bran used in their production is exactly for this number of days.

  • egg - 1 pc.
  • dry yeast - 5 g
  1. Heat the liquid milk a little, add yeast and sweetener. Wait 10 minutes.
  2. Mix dry ingredients, add yeast and milk.
  3. Now you need to wait about 30 minutes while the dough rises.
  4. Place it on a baking sheet with special paper. These cookies need to be baked at 180 degrees. oven for about 15 minutes.

Required components:

  • gluten - 1 tbsp. l.
  • salt, sugar substitute - to taste
  1. Mix dry ingredients into a homogeneous mixture.
  2. Gradually add yogurt to form a dough. If necessary, the amount of yogurt can be increased slightly; the consistency of the dough should be soft and plastic.
  3. Roll it into a log and place it in the refrigerator for about an hour.
  4. From the cooled dough, flat cakes with a diameter of about 6–7 cm are formed, baked for 15 minutes in preheated to 180 degrees. oven.

  5. Place the cookies on a lightly oiled hot frying pan with a spoon and fry, turning them over to ensure an evenly toasted surface.

We prepare products:

  • yolks - 2 pcs.

  • gluten - 10 g
  • protein isolate - 20 g
  • salt, sugar substitute, flavorings - to taste
  1. Grind the bran (to a fine grain).
  2. Beat the yolks with olive oil, add water, sugar substitute and baking powder, mix thoroughly.
  3. Add dry milk and bran in small portions, mix again and wait 5 minutes for the bran to swell.
  4. Add isolate, gluten, knead the dough.
  5. Roll out with a regular rolling pin to make a flat cake up to 2 mm thick, cut out square cookies.
  6. Bake in a hot oven (180 degrees) for about 15 minutes, let cool.

The finished cookies are crispy and crumbly, so they must be removed from the oven very carefully and only after they have cooled completely.

Is it possible to lose weight if we are talking about sweet lovers? It’s hard to believe, but on the Dukan diet this is quite possible, because this nutritional system does not even prohibit cookies! Your favorite pastries with tea or coffee make it possible to lose weight with ease and pleasure.

Shortbread diet tarts with cherries
Take for 2 tarts:

30 gr. cottage cheese (0.5%)
. 1.5 scoop (40 g) of protein (casein, skim milk powder) I had chocolate
. 1 tbsp. corn starch
. 30 gr. oat bran (you can grind it finely)
. 1/2 tsp. stevia
. 1 tbsp. coconut oil (liquid)
. 1 protein
. 1/3 tsp. baking powder
. 1/3 tsp. nutmeg

For the cream we take:

1/2 scoop of casein
. 50 ml. milk (0.5%) warm
. stevia to taste

For the berry broth we take:

Cherries (frozen or fresh)
. 50 ml. water
. stevia to taste
. 1/4 tsp. Agar-agar

Sprinkles:

Skimmed milk powder

Mix butter with egg white
. add dry ingredients
. knead the dough
. spread into molds in a thin layer
. bake in the oven at 180°C for 10-12 minutes

Making the cream:

Just mix everything well and put the cream in baskets
. put it in the refrigerator to cool

Now let's take care of the cherries:

Soak agar-agar in water for 15 minutes
. Now put all the ingredients in a saucepan, bring to a boil and simmer for 3 minutes
. put the cherries on top of the cream and pour over the syrup and put them back in the refrigerator

A pack (200-250g) of cottage cheese, 1 yolk, 2 tablespoons of isolate, baking powder, sakhzam to taste (4 scoops of fit), a little salt. Knead the dough and put it in the refrigerator for 15 minutes.
Place the dough into molds and bake for 20-25 minutes at 190 degrees.
The baskets were first coated with chocolate paste and then decorated with fluffy protein cream.
For the cream, 4 egg whites and 1.5 tsp fitparad, beat a little citric acid, place in a water bath so that the water does not touch the bottom of the bowl in which the whites are beaten. Beat for 7-10 minutes, then remove from heat and continue whisking for another 3-4 minutes.

1 tsp (5 g.) ground cinnamon. Beat the eggs with sweetener into a tight foam (I beat with a regular mixer for 2-3 minutes), then add the cottage cheese and beat for another half a minute. Add all the dry ingredients to the beaten eggs with cottage cheese and mix well with a spoon. Pour cupcake dough into silicone molds.
I would like to give advice on the molds for these muffins - it is best to use separate muffin tins with grooved edges, it will be easier to get the muffins out of them. And from those in the photo, it’s difficult to get, but it’s possible!

Bake the cupcakes in a preheated oven at 180 degrees for 20 minutes.

I made the glaze by eye

2 spoons cocoa
100 g milk
1 spoon of soft sour cream
and 1/4 spoon of sahzam

40 ml milk,
1-2 tbsp. spoons of natural Activia yogurt (without additives),
saccharzam - 6 tablets,
vanilla on the tip of a knife,
zest of half a lemon + a few drops of lemon juice (this is all for aroma and bright taste),
because I was a little short of 4 full tablespoons of cornstarch, so I replaced the missing part with soy flour.
It's not scary, soy flour is an additional option. 1 tablespoon is possible.

I mixed everything and sent it to bake in a preheated oven. Made 6 cookies. True, the first time the dough turned out a bit liquid and the cookies were thin. But they are very tasty and aromatic. And because I didn’t eat anything with bran today, so three cookies went to dinner for tea. It would be better, of course, two, but it’s very tasty!

For the CORK (based on the Biscuit-Souffle) take 3 eggs, separate the whites from the yolks, beat the whites. Mix the yolks with 1 tbsp. oat bran + sugar + vanillin + 1 tsp. baking powder + 1 tbsp. isolate + 1 tbsp. classic low-fat yogurt (or cottage cheese) Carefully combine the whipped whites and yolk mixture and bake for 10 minutes at 180.
Soufflé (based on the Bounty cream from O. Kurochkina) soak 10 g of gelatin in 100 ml of milk. Mix cottage cheese 150g + 1 classic yogurt (125g) + a little lime acid. Beat 2 egg whites with sugar until stiff peaks form. Melt the gelatin, add it to the cottage cheese, add aromatic orange and a little orange coloring. Mix, pour into the whites and beat at high speed for 10 seconds. Then pour the cream into the mold, put the cake on top and put in the refrigerator for an hour!))) I made it myself. That's why I'm sharing.
3 yolks, 180g of cottage cheese (a pack of pasty, but not liquid), 1 tsp of fitparada (next time I’ll put more), 1/3 tsp of soda. Beat.
Add 2 tbsp of OO flour, 1 tbsp of starch, 2 tbsp of isolate, a mixture of spices (cinnamon, nutmeg, ginger, coriander, black and red pepper, aromatic buckwheat honey).
Knead the dough by adding about 50 ml of milk. The dough is thick, I kneaded it with my hands, rolled out the sausage and cut it into portions. I rolled it into balls and flattened it a little. It turned out to be 14 pieces.
Bake for 30 minutes at 190 degrees. Then I left it in the oven.
Covered with glaze made from catfish, sakhzam and milk.

Coffee -1 tsp. with a slide (I have Moccona with hazelnut flavor)
Oat bran – 2 tbsp.
Egg – 1 pc.
Olive oil – 1 tsp.
Corn starch - 1 tbsp.
Sakhzam - to taste (I have a fitparad of 15 measuring spoons)
Baking powder – 0.5 tsp.
Dilute coffee 1 tsp. warm water. Beat the whole egg until thick foam, add sakhzam, diluted coffee, beat. Add oil, stir. Mix all dry ingredients, add to beaten egg and mix well with a spoon. Let it sit for about 10 minutes. Cover a baking sheet with a silicone mat and spoon out the dough at a distance from each other. Bake for 10-12 minutes at 180 degrees. Immediately remove from the mat using a spatula. Spread in a single layer to cool.
You can take not 1, but 2 eggs, leaving all other proportions the same. In this case, the number of cookies will increase (in the first case there were 14 pieces, in the second - 27), but they will be soft and not crispy.

I hope the girls from this site won’t be offended by me. I couldn’t find anything like this in our database, so I prepared it and decided to post it here - it turns out delicious.
Words from the author of the recipe, a few comments of my own, photos are mine. The whole set makes 8 croissants. You can make more cream, I only had enough.

2 tsp baking powder
2 tbsp cornstarch
5 tbsp sahzam - I have 2 incomplete tsp of crushed sahzam tablets. It seems to me that 5 tbsp is a lot of sakhzam. Test the dough before baking.
I didn't add vanilla
Separate the yolks from the whites, mix the baking powder with the yolks, starch, sugar and vanilla.
Beat the whites to stiff peaks and add carefully to the yolks. This is the dough you get:

Take a large and round (important) mold, cover with baking paper, pour in the mixture and bake for 10 minutes at 170 degrees or until lightly colored. (I was too lazy to wash the mold later and I spread the dough on baking paper)

Preparation

Mix bran, spices, soda, isolate, citric acid and gluten. Then add sakhzam, aromik, eggs, kefir. Add COM to the dough. Knead the dough again. The dough should be liquid (like medium-thick yogurt). Place on a baking sheet covered with a mat. Place in a preheated oven at 180 degrees for 20-30 minutes.
Afterwards we cool it. I crushed it with a blender.

Custard.

Place 150 ml of milk on the stove to warm up, separately mix fitparad (4 scoops), 20 grams of CC, 150 ml of milk. When the milk has warmed up, pour in the mixture, stir constantly, do not bring to a boil. When the mixture becomes thick you can add milk. (Sometimes I add aromatics and low-fat cocoa.)

Form into small balls and refrigerate.

The cookies turn out crispy and crumbly)
2 yolks+1 tsp. beat sunflower oil with a mixer. Add sakhzam + 2 tbsp to the mixture. water + baking soda + lime acid. Beat again. Add 30 grams of COM and 24 grams of ground OO to the mixture (I didn’t grind 2 tbsp, I used a fine grind), aromik “Keks” or vanillin. Beat with a mixer and let stand for 2 minutes.
Then add 10 grams of gluten and 20 grams of isolate. Knead the dough. If the dough is very sticky, add another 10-20 grams of isolate. Then roll out the dough through a plastic bag with a rolling pin (thickness 1-2 mm). Place on a baking sheet, cut the dough into squares there, I also used a fork.
In a preheated oven (160-170°) - 10-15 minutes. Then dry on a wire rack. You can dry it further for a crispier finish.
