Casserole with pumpkin in the Dukan multicooker. Dukan cottage cheese casserole

Pierre Dukan is a nutritionist with 40 years of experience. He developed a diet to combat excess weight. The diet is based on the consumption of protein products and consists of 4 stages:

  1. "Attack". At the first stage, only drinking water and proteins are consumed.
  2. "Cruise". At the second stage, protein foods and vegetables without starch are alternated.
  3. "Consolidation". Weight normalization occurs. A person consumes carbohydrates in the form of rice or pasta, but not more than twice a week.
  4. "Stabilization". In this phase, a person maintains his weight.

Dukan cottage cheese casserole is prepared at the “Cruise” stage, but is also suitable for others if you eat it no more than once or twice a week. The four basic rules of the Dukan Diet are:

You cannot use sugar, only sweetener. It reduces the calorie content of food and improves the human condition: restores the immune system, speeds up metabolism.

Dairy products with minimal fat content. Low-fat cottage cheese contains more calcium and is low in fat and carbohydrates. Dairy products will also remove excess fats from the body.

Oat bran. 3-4 tablespoons per day is the norm in the Dukan diet. Bran improves intestinal function and saturates the body even in small quantities.

Do not use animal fats in food. Butter, sausages, and lard increase cholesterol levels in the body and threaten the functioning of the heart.

During this phase, only proteins are consumed and intense fat burning occurs. The cottage cheese casserole for the “Attack” phase is prepared without egg yolks.

Anyone who has tried to lose weight on diets knows: it is difficult to give up your favorite foods if they are prohibited. But fans of the Dukan diet who love cottage cheese are very lucky, because cottage cheese occupies one of the main places in this weight loss system. The most popular cottage cheese dish is cottage cheese casserole.

Cottage cheese and the Dukan diet

This wonderful product is included in recipes for all stages of a strict diet. The presence of complete protein, calcium, vitamins, micro- and macroelements makes it a godsend for everyone who monitors their weight and health. And since Dukanites must consume protein foods throughout their long journey of losing weight, cottage cheese is ideal for the main role. Of course, he copes with it “excellently”!

The main dish of the Dukan protein diet is cottage cheese with no more than 0.6% fat content.

Why casserole

It would seem that there is nothing complicated here - buy low-fat cottage cheese and eat it as much as your heart desires. However, ordinary cottage cheese is not so easy to eat, even with a small spoon. Each portion is difficult to swallow, you can’t swallow the allowed low-fat, dryish cottage cheese, and you just want to wash this product down with something. The casserole, being tender and juicy, solves all problems; with its help, eating cottage cheese becomes easy and enjoyable. A variety of ingredients that can be varied in recipes any way you want are guaranteed to make this dish your favorite.

Cottage cheese casserole has a delicate and juicy consistency

Is it possible to eat store-bought?

Many stores sell crispy, ready-made casserole slices, but they are not suitable for all stages. On Attack, Cruise and Anchorage, you will have to prepare this dish yourself, since the recipe includes strictly defined dietary products. And only starting from the Stabilization phase will you be able to treat yourself to a sweet treat from the confectionery shop.

General cooking rules

We already know that a casserole can include a wide variety of products. However, there are components that are used in every recipe - cottage cheese and eggs. The mass for subsequent baking is prepared according to general rules, which we recommend that you familiarize yourself with before starting cooking.

Preparing the curd mass

  • Prepare the eggs by separating the yolks from the whites.
  • Mix the cottage cheese with the yolks and other ingredients, trying to achieve maximum homogeneity. This can be done manually, with a mixer or blender.
  • To make the mixture plastic, the curd can be passed through a sieve, and if granular is used, you need to act carefully and not destroy the curd structure.
  • Beat the chilled whites; it will be enough to keep them in the refrigerator on the top shelf for 10 minutes. You can add a little salt at the beginning of the process to make a strong foam. Beat with a mixer, making sure that the dishes are dry, clean, without the slightest trace of fat.
  • Bring both parts together slowly, using gentle circular movements, trying to maintain the fluffiness of the whipped whites.

Features of baking in the oven

  • Preheat the oven and prepare the baking pan. This can be a frying pan with high sides or a baking sheet, in both cases the bottom and edges are lined with parchment. Many housewives use silicone molds; they are convenient to use, easy to clean, and the casserole results in an interesting textured surface.

Silicone baking molds - a modern alternative to a frying pan

  • While preparing the casserole mixture, the oven must be preheated to the required temperature - 180 degrees. The prepared mixture is placed in a baking container and placed in the oven on the middle shelf.
  • Make sure that the surface does not burn. If it browns too intensely, you can cover the casserole with foil.
  • Baking time may vary depending on the products included in the mass, from 20 to 50 minutes. The casserole is ready if, when pierced with a wooden stick (you can use a toothpick or a match), no raw dough remains on it.

To check the readiness of the casserole, pierce it with a wooden stick - the dough should not remain on it

Parchment for the frying pan can be replaced with special baking paper in rolls, which is sold in hardware departments of stores.

In a slow cooker

It’s convenient to cook a casserole in a slow cooker - you don’t have to worry about preheating the oven or finding a baking dish. Place the mixture in a bowl lightly greased with olive oil (0.5 tsp), close the lid and set the required “Baking” mode (40–50 minutes). For the Stabilization stage, butter is used.

Before removing the finished casserole, the bowl must be cooled. To do this, take it out of the multicooker and leave it on a damp towel for 10–15 minutes. After this, place a steaming device on top (a plastic low bowl with holes) and turn the casserole over; it comes out easily and does not break.

In order to remove the casserole from the multicooker without breaking it, use special devices

Microwave

The microwave is great for making casseroles. True, you can’t do without special dishes with a lid and the marking “For microwave”.

The dish is baked at a power of 500 W; 8–10 minutes are enough for complete readiness.

This method of baking a casserole is suitable for those who don’t have time to wait for a long time and need a quick snack, for example, in the morning - “quick” dishes are perfect for breakfast.

What to cook at different stages

On Attack

For a stingy Attack of products you need a minimum amount; the casserole is very easy to prepare and does not take long.

The basic rule is to remember that all components must be low-fat (cottage cheese 0.6%) and included in the permitted list.

It has been noticed that casserole is most popular specifically for Attack, as it helps to fill up and not “break.” The explanation for this fact is very simple - almost all recipes contain oat bran, which satisfies the feeling of hunger for a long time, and, of course, with a pleasant taste that is reminiscent of a dessert from childhood.

With bran

Prepare the products:

  • low-fat cottage cheese - 250 g
  • eggs - 2 pcs.
  • oat bran - 2 tbsp. l.
  • salt, sugar substitute - to taste

Carefully separate the egg whites from the yolks and place in a cool place. Mix the yolks with cottage cheese, adding bran and sugar substitute. While you were preparing the curd-yolk mixture, the whites had time to cool and you can mix everything. Bake for 20 minutes in a hot oven, spooning the mixture into the prepared pan.

This option can be prepared in the microwave, reducing the time to 8 minutes.
