Rinse (it’s better to take crispy varieties - frillis, iceberg, the same romaine, but if you don’t have those, any salad greens will do) in cold water, dry and put in the refrigerator for a while: this will make them even crispier. Fry the pine nuts in a dry frying pan until golden and set aside, place the bacon in their place and fry until golden. Transfer bacon to paper towels to remove excess grease.

If you decide to make shallot salad (which I strongly and strongly recommend), peel the onion, cut it in half lengthwise without removing the root that holds all the layers together, and blanch in boiling water for literally 10 seconds. Quickly sear the cut side in a dry but hot frying pan, pressing the onion halves against it, then pour a spoonful of balsamic vinegar over each and stir the contents of the frying pan until the vinegar has evaporated. Take the shallot out, let it cool, cut off the bottom part along with the bottom (you can already) and disassemble it into layers, starting not from the outside, but from the inside - this makes it easier to maintain the shape of the petals.

Combine all dressing ingredients and whisk with a fork or shake vigorously in a closed jar until smooth. Tear the salad into a suitable bowl with your hands, add the shallots and cherry halves, pour over the dressing and mix well. Divide among plates, adding fried bacon to each plate and sprinkling with pine nuts - and off to the table!
