Ground turkey cutlets: cooking recipes. Turkey cutlets: best recipes

To prepare the cutlets, you can buy ready-made minced turkey, finely chop the onion, grate the potatoes, squeeze the garlic through a press, and add the soaked loaf.

I prefer to use a turkey thigh. As a rule, there is a little fat on it, which will make our cutlets even juicier, and the bone can be hidden in sauce or a small saucepan of soup.

I also like it when the minced meat is homogeneous, so I cut the meat, onions, and potatoes into cubes and put them through a meat grinder.

I also send garlic and a soaked bun there. When it comes to greens in cutlets, I prefer dill; I chop it finely and add it to the prepared minced meat. I don’t add an egg, because the minced turkey is already “tight” and our cutlets will keep their shape perfectly. If you don’t like bread in cutlets, you can simply leave it out; they already turn out very tasty. Don't forget about spices.

Ours is ready. Now heat the frying pan, pour a little vegetable oil on it and put a piece of butter. While the oil is heating up, beat the minced meat, form it into cutlets and place it on a hot frying pan. Let them squash a little high fire, a minute, no more needed, then turn the heat down and cover the cutlets with a lid.

Fry for about three minutes and turn them over to the other side. Another seven minutes and our wonderful dish is ready.

As a side dish for turkey cutlets, you can serve mashed potatoes or rice with vegetables; turkey goes well with them.

By the way, using this same recipe you can prepare not only fried turkey cutlets, but also steamed ones - for the youngest members of your family. True, without adding pepper. These are the delicious and healthy cutlets I made.

Bon appetit and good recipes!

Everyone loves cutlets. But not everyone knows how to cook them. Today I will tell you how to make juicy soft turkey cutlets. There will be no dancing with a tambourine around the stove. The recipe is extremely simple and can be used with any type of lean meat, be it chicken or beef. Go.

How to cook delicious cutlets from lean meat

I will never forget (and my husband will never forget me either) my first cutlets. They looked more like soles than something edible, both in appearance and in taste. Adding a little - or a lot - of rice to the mince helped. But the cutlets became simply crumbly. No juice.

Then bags of seasonings for cutlets appeared on sale, which you just need to fill with water, add minced meat and voila. This was exactly the salvation I had been waiting for. But what if there is no magic bag? And here I began to figure out what makes a good diet cutlet.

If you looked at the meatball recipe, you know that the minced meat should be ground as much as possible and more reminiscent of pancake dough. It is easy to combine additional components with such meat. Use no more than one egg per 500 - 700 grams of minced meat. Or take only the yolks. Egg white always makes cutlets tough. Add some liquid. This could be water, milk or cream. And if you still doubt that it will turn out delicious, use cheese. It always works flawlessly.

The book is also great as a side dish.

Ground turkey cutlets

I never recommend using store-bought minced meat, especially if it is important to get the maximum dietary product. They always try to add dark meat with fat or skin to minced meat. Better do it yourself. To do this, pass the turkey fillet through the finest sieve along with the onion or garlic. Unlike beef or veal, once is enough for poultry.

Use a small amount of tempura, breadcrumbs or breading mixture. I prefer the latter, since it contains only oatmeal and bran without salt. Oatmeal absorbs well and retains moisture. Among the spices that go well with turkey are sweet paprika (can be smoked) and black pepper. Take fresh dill or parsley. In order for the cutlets to be guaranteed juicy and not lose a drop of precious moisture, you will need batter.

You can cook minced turkey cutlets either in a frying pan or by steaming them. If you plan to fry, do it over medium-low heat with the lid on.

You can use sour cream diluted with water for filling; often a spoonful of paste or regular soy sauce is added to such sauces.

Instead of cheese for the filling, you can use feta cheese or combine it with ham. The result will be something like a dish called “Cordon Bleu”.

Option 5: Chopped Turkey Breast Cutlets

These cutlets will taste better if you let the minced meat sit overnight in the refrigerator. The turkey will be marinated, the onions and other products will be soaked in meat juices.

Option 6: Turkey cutlets with zucchini

Another option for turkey cutlets, which can be fried, baked and even stewed in some sauce. It’s just important not to make the minced meat in advance. If it stands, a lot of juice will appear. Zucchini and zucchini can be replaced with each other.

  • 0.15 kg zucchini;
  • 60 g onion;
  • salt;
  • 1 tsp. Italian herbs;
  • oil for frying.

How to cook

Chop the turkey and onions with a food processor or simply twist them. Add a teaspoon of Italian herbs to them, stir and set aside. You can add salt right away.

In addition to zucchini, you can cook cutlets with grated pumpkin, potatoes, shredded and scalded white cabbage.

Option 7: Turkey thigh cutlets with mushrooms

Turkey thighs are used for flavorful and very juicy cutlets. The meat on them is dark, it tastes somewhat like beef, not as dry as breast. Since thighs come in different sizes, the quantity is not given in pieces, the total weight of pitted trimmings is given.

Ingredients

  • 600 g turkey thigh;
  • egg;
  • 3 champignons;
  • 1 onion;
  • Oil;
  • 4 spoons of crackers;
  • 2 slices of bread;
  • 80 ml oil.

How to cook

Finely chop the champignons along with the onions. Pour into a bowl. Cut the thigh meat into pieces, then grind through a meat grinder and add to the mushrooms.

Soak a couple of slices of bread in water, squeeze, knead with your hands and put into minced meat. Add one egg, half a teaspoon of salt, pepper and mix. Make cutlets of the same size.

Pour the crackers into a bowl, roll the formed cutlets, pressing the crumbs onto them so that they do not crumble in the pan and do not burn.

Heat the oil, add the cutlets and fry over fairly high heat for two minutes. No need to cover. Then we transfer it to the form, stretch a piece of foil or put on a lid.

Place the cutlets in the oven and heat at 170 degrees under foil for another 15-20 minutes. Then add vegetables, side dishes, sprinkle with herbs and serve.

Instead of champignons, you can use other mushrooms; if necessary, boil them first.

Option 8: Tender Turkey and Chicken Cutlets

For such cutlets you need not only poultry, but also butter. It is this that gives the dish juiciness and tenderness if it is prepared correctly.

Ingredients

  • 500 g turkey fillet;
  • 300 g minced chicken;
  • 100 g butter;
  • 100 ml cream;
  • 0.5 tbsp. flour;
  • 3 slices of bread;
  • egg;
  • 0.5 tbsp. oils;
  • garlic, salt.

How to cook

Cut the crusts off the slices of bread, pour on the cream and leave for about ten minutes. For now, you can prepare minced chicken and turkey. Add garlic and salt to it; there are no onions in this recipe.

Place the bread along with the cream, no need to squeeze, break the egg and mix. Cut the butter into 10 parts of 10 grams each. We also divide the cutlet mass into 10 parts. Make cutlets with a piece of butter inside, roll in flour.

Fry the cutlets in vegetable oil, transfer to a saucepan or another frying pan, but with a tight lid. Add 0.3 cups of water, simmer over low heat for 15 minutes.

Instead of water, you can use broth or milk or cream for stewing, but not tomato juice. It contains a lot of acid, which tender poultry meat does not like.

Option 9: Turkey and Pork Cutlets

This cutlet recipe is for baking in the oven. The weight of each type of minced meat is indicated; if desired, take the same amount of meat and twist it through a meat grinder. To fill, you will need a little ketchup and sour cream.

  • 300 g minced pork;
  • egg;
  • 100 g bread;
  • 0.5 tbsp. milk;
  • 400 g minced turkey;
  • bulb;
  • 200 g sour cream;
  • 2 spoons of ketchup;
  • 5 g garlic.

How to cook

Pour the milk over the pieces of bread and let them soak. While this is happening, mix two types of minced meat with chopped onion and egg. Add squeezed bread and salt. We make a simple cutlet mass.

Roll the minced meat into balls, place in one layer in a greased mold and set to bake. Cook until a light crust appears on top.

In a bowl, mix ketchup with sour cream and a little glass of water, add chopped garlic and salt. Let's heat it up. Take out the cutlets and pour the sauce over them. Cook for another 15 minutes.

You can immediately pour the sauce over the cutlets and bake them under a piece of foil, but in this case they don’t hold their shape very well, they don’t turn out as tasty, it’s better to cook them in two stages.

Option 10: Turkey and beef cutlets with red sauce

Beef, however, like turkey, is a little dry. Therefore, cutlets made from it are often combined with various sauces. Red gravy with vegetables is ideal for pouring and stewing. In addition, it goes well with all cereal and vegetable side dishes.

Ingredients

  • 3 onions;
  • 2 cloves of garlic;
  • 400 g turkey;
  • 2 tbsp. l. tomato paste;
  • 70 g flour;
  • 400 g beef;
  • 550 ml water;
  • 100 ml oil;
  • 5 slices of bread;
  • dill or other greens;
  • laurel leaf.

How to cook

We wash the turkey and beef, cut into pieces, and grind through a meat grinder with two onions and garlic. Soak the bread in milk or just in water, squeeze it out and you can also put it through a meat grinder. Or knead thoroughly with your hands and add.

Salt the minced meat and add pepper. We make balls out of it, roll in flour and fry in a frying pan, but do not cover. Just bring it until golden brown. Transfer to a saucepan or saucepan in which we will simmer the cutlets with sauce.

It is better to pour out the oil from the frying pan after the cutlets, add fresh fat, three spoons is enough. Chop the onion, pour into a frying pan with oil, lightly fry and add grated carrots. Cook the vegetables for about five minutes, add tomato paste. Be sure to fry it, then add water with a spoonful of flour diluted in it.

Let the sauce boil, add pepper and salt, then pour it into the previously fried cutlets. Place on the stove, cover, and simmer for about 20-25 minutes after boiling. Keep the fire low so that nothing burns. Season with laurel and herbs.

Can cook tomato sauce with grated tomatoes, take at least three pieces for this amount, chop and evaporate the water. Thanks to this, the taste will appear and the color will become brighter.

Option 11: Turkey cutlets with cream

Minced meat is used to prepare juicy and soft cutlets. It can be made or bought. Additionally, you will need cream and a few slices of bread. Be sure to take a white and slightly stale bun. Fresh bread becomes slimy when soaked. The only spices are salt and pepper. You can use something else if you wish.

Ingredients

  • 600 g minced turkey;
  • 150 ml cream 15%;
  • 100 g onion;
  • 8 g garlic;
  • egg;
  • 100 g white bread;
  • salt pepper;
  • 70 ml oil;
  • 70 g breadcrumbs.

Step-by-step recipe for classic cutlets

Pour the cream over the pieces of bread and let them soak. You can sometimes turn it over to the other side. While we peel the onion and a couple of cloves of garlic, finely chop, grate or grind.

Mash the bread well, add to the minced turkey, add vegetables, egg, salt and pepper. Stir thoroughly and you can immediately roll the cutlets. These can be balls or give them a classic elongated shape. Sprinkle with breadcrumbs and place on a board.

Heat the oil and place the cutlets in it. First we cook without a lid. We do this until the side is browned. Then carefully turn it over and cover it. Let it steam for ten minutes over medium heat.

If you don’t have breadcrumbs at home, you can simply roll these turkey cutlets in flour. Of course, the crust won’t be as thick and crispy, but it will still be delicious.

Nutritionists advise including poultry dishes in your diet. They are not high in calories, but they are the nutritional value no doubt. Turkey cutlets can replace meat cutlets, competing with them in taste and benefits for the body. Novice cooks are afraid to make them for one reason: turkey fillet does not contain a large amount of fat, and products made from it do not always turn out juicy. The alarm is in vain: if you follow the rules for preparing products from ground turkey, they will turn out no less tender and tasty than those made from beef and pork.

Cooking features

The process of preparing turkey cutlets is similar to preparing regular meat cutlets. First, the meat is minced through a meat grinder, then mixed with egg, salt, spices, and other ingredients. Cutlets are formed from the resulting mixture, breaded in breadcrumbs, and fried on both sides in boiling oil. However, the process of cooking turkey cutlets has its own characteristics that it is advisable to take into account.

  • Stores sell ready-made ground turkey, but it can be made from various parts of the bird and may contain cartilage and skin. This does not make it healthier or tastier. It’s better to prepare the minced meat yourself, then you can be sure of its quality.
  • By freezing and thawing meat, you can disrupt its structure, causing it to become tough and dry. It is better to purchase chilled product for cutlets. If your turkey is frozen, wait until it thaws in the refrigerator. By eliminating temperature changes, you will preserve the juiciness of turkey meat.
  • If there are no small children or elderly people in the family, you should not grind the fillet into minced meat too much, turning it through a grid with large holes or chopping small pieces using a heavy knife or culinary hatchet. Cutlets made from this minced meat are more juicy. If you want them to be softer and more tender, the fillets need to be passed through a meat grinder twice, the second time using a nozzle with a finer mesh
  • Including vegetables in the minced meat will make the dish more juicy. Vegetables will give it additional notes.
  • In order for the cutlets to better hold their shape, eggs, semolina, flour, and breadcrumbs are added to the minced meat.
  • By kneading the minced meat with your hands, you can make it more dense and viscous.
  • To make it easier to form cutlets, it is recommended to cool the minced meat and wet your hands in cold water.
  • Cook the turkey cutlets in a frying pan for 15–20 minutes. First, they are fried for 5 minutes on each side until a crust forms, then steamed over low heat, adding a little water, broth or sauce. Bake the ground turkey cutlets in the oven for 30 minutes. The steaming time for steamed products is 30–40 minutes, depending on their size.
  • Before frying cutlets in the oven or in a frying pan, they need to be breaded. To do this, use crackers, flour, rolled oats, semolina, and bran ground into powder.

The process of preparing cutlets may have additional features depending on the specific recipe.
