Trout: the benefits of red fish

  • From school years we know that this fish with a noble name lives only in clean water, and is a close relative of salmon. Exquisite in taste, trout fillet, like salmon, is a generous source of the famous Omega-3 unsaturated fatty acids, which help our blood vessels and joints to remain young, and the heart to work like a powerful motor.

To protect your health from age-related unpleasant changes, nutritionists advise eating trout fillet at least 2-3 times a week.

  • Salmon is also tasty and incredibly healthy, but quite high in calories, and it costs a lot. But 100 g of trout fillet contains less than 100 kcal, which makes it an ideal product for the menu of those people who are losing weight. In addition, the cost of this fish meat is more acceptable.

  • Home-baked trout in pita bread turns out to be dietary - it can be safely included in the diet even for those who have stomach problems.

How to deliciously cook trout baked in pita bread at home

Hospitable Armenians cook red fish with a lot of spicy greens, wrapped in a thin unleavened flatbread, and served with a sauce of beans and juicy tomatoes.

For the indicated volume of products, you need to take a fish weighing up to 1 kg. Since the beans do not tolerate haste, then until the moment the treat is served to the table, there should be at least a day in stock.

  • We start cooking with beans: we wash them, put them in a small saucepan, and fill them with water so that its level is 1 cm higher than the beans.
  • In the morning, drain the water in which the beans swelled, cover it with a fresh portion, and send the saucepan to a medium-intensity fire. Cooking time until half cooked - about 40 minutes.
  • We wash the fresh trout carcass from the mucus covering it, clean off the scales, gut it, and then thoroughly rinse the abdomen from the inside with a stream of running water.
  • We chop the washed greens, mix (you can also add a little dill), and fill the abdominal cavity with it, leaving a little for gravy.
  • We put half a lemon in the abdomen, after peeling it, and cutting it into half slices. Having generously salted the fish, and flavored it with pepper, we leave it to soak in flavors for a quarter of an hour.
  • We take a baking sheet, a little longer than a fish carcass, and generously grease it with melted cow butter.
  • Having covered the metal sheet with pita bread, we also oil the inside.
  • On one of the edges of the sheet we form a thick “pillow” of onion slices (we take half).
  • If the question of the calorie content of the treat is not fundamental, then the fish can be wrapped in thin bread, overlaid with slices of ice cream cow butter.

Red fish loses its juiciness during baking, but the oil will prevent dryness of the fillet, restoring tenderness to it.

  • You can place the fish in the middle of the bread cake, and then wrap it in the traditional "envelope".
  • For juiciness and the formation of a golden crust, the outer part of the “envelope” can be thickly spread with Armenian matsoni, or kefir, which is more familiar to us.
  • On top we put the fish already saturated with spicy aromas, sprinkle it with the second part of thinly chopped onion half rings.
  • Then it remains only to wrap the trout in a pita roll, fastening the edges, and send it to the oven, heated to 200 ° C.
  • Having lowered the temperature to 170 ° C, bake the fish for about half an hour until browning.
  • In the meantime, the fish will reach the condition, let's get on with the sauce. Pour the tomatoes with boiling water, remove the skin from them, and cut the juicy pulp into small cubes.
  • For 1 tbsp. butter, simmer the tomato slices until softened, about 15 minutes.
  • Add greens, which were specially left, and beans, as well as crushed garlic, to the tomato puree.

  • Salt and pepper, simmer for another five minutes, then remove the sauce from the heat and cool.

Gravy is served with ready-made fish baked in pita bread. Before putting the dish on the table, the trout roll inside with a sharp knife must be divided into portions.

  • Putting the second cake on the first one, cover its inner side with a thin layer of cheese, which is sprinkled with chopped fresh herbs.
  • Next, roll both cakes into a tight roll. Having wrapped it in food polyethylene, we place an almost ready-made snack delicacy in the cold for half an hour.
