I thought for a long time about how much kefir to write in the recipe and decided to leave 300 ml, although I add 400 ml myself.

Why? Because if you add 400 ml, then you should have a great non-stick frying pan that never lets you down! I recently bought one for myself and now I can fry anything without a single drop of oil.

If you have the same frying pan, then feel free to add 400 ml!

I immediately foresee questions about the absence of gluten - if there is none, then add another spoonful of starch, but only in this case, recalculate the DOPs, i.e. Divide the resulting portion of pancakes into 1.5 days.

Kefir pancakes according to Dukan: preparation

I don’t put the pancake dough in a warm place or create any additional conditions, but simply cover it with a plate and set it aside.

After a while, we start frying the pancakes - I repeat that I do not use oil, although you can do this if you wish. The frying pan needs to be well heated, and then reduce the heat to slightly above medium power. For example: on my electric stove, each burner has 9 power levels, first I heat the frying pan at 9, and then reduce the power to 7.

Immediately before frying, add baking powder to the dough, mix and start the process

Everything seems simple here, but I want to give a few tips that will help you prepare Dukan pancakes without any problems:

  • Try not to fry 4-5 pancakes at once, start with 2, watch how they turn over, and only then, if desired, increase the number of pancakes in the pan. I fry 2 pieces. - the quieter you go, the further you'll get.
  • The smaller the pancakes, the better the result! For me they turn out to be 5-7 cm in size, if larger, then even in a frying pan with a good non-stick coating it is problematic to remove them, because. the dough is runny. Don't try to make pancakes out of pancakes!
  • To pour the dough, I use a regular 50 ml vodka shot glass. - this is just enough to prepare 2 pancakes.
  • If you have problems with turning the pancakes, then do this: first pry the edge with a spatula, and then carefully move the spatula under the pancake with small flickering movements from side to side, as if cutting it from below;
  • Be patient, because... There is a lot of dough and it won’t take 5 minutes to fry - I fry the pancakes for 15-20 minutes.

Pancakes become much tastier when they cool. You can come up with a variety of fillings to suit your taste! For example, I really like it with honey, but I’m on Stabilization. I can recommend you yogurt or cottage cheese with a sweetener, and among the salty options I really like this one:
