Apple season begins! In all the gardens you can hear the amazing aroma of ripening apples. July thunderstorms and the wind continually knock them off the branches, and in the mornings the garden is strewn with apples! It doesn’t matter that the apples are still greenish and a little beaten down after falling - they are perfect for baking the fastest and most delicious apple pie!

I was very surprised to learn that what I thought was a simple apple pie, turns out to be a classic charlotte! It is amazingly easy and quick to prepare, for which it is sometimes called a “five-minute pie.” Let's bake a fluffy and tender apple treat - one of my favorite types of homemade baked goods!

Ingredients:

  • 3 eggs;
  • half a glass of sugar;
  • an incomplete glass of flour;
  • 1 teaspoon of soda;
  • 1 tablespoon vinegar;
  • 5 – 7 – 10 apples (depending on their size).

That's all, as you can see, the set of products is minimal, and the pie is enough for the whole family, because it is very fluffy!

How to bake:

The most time-consuming task in this recipe is peeling the apples, which we will do first. After washing them, cut them into quarters and remove the cores and peel.

Let's prepare the pie pan. It is best to take a springform pan, cover the bottom with pastry paper and grease this paper and the sides of the pan with sunflower oil. Or grease with butter and sprinkle with breadcrumbs or semolina.

Well, this time I decided to try baking in a cast-iron frying pan - to find out how it would turn out, because not everyone has springform pans. I’ll say right away: if not, it’s worth buying - for such pies and biscuits. The pie stuck to the bottom, despite being greased with oil, and it took a lot of pain to get it out by prying it with a spatula :)

Cut the apples into thin small slices and scatter them evenly over the bottom of the pan. Now you can cook thick crust, without fear that it will settle while we are fiddling with the apples.

Beat the eggs with sugar using a mixer; there is no need to separate the yolks from the whites, as for a sponge cake!

Beat for a minute - one and a half, this is enough to get a fluffy thick mass with bubbles.

Pour flour into a bowl, soda into the flour, quench with vinegar and mix thoroughly, but carefully, so as not to knock down the foam.

Pour the dough onto the apples, distribute it evenly with a spoon, and place the mold in a preheated oven.

It bakes for five minutes, although not 5 minutes, but still quite quickly - 20 - 25 minutes, over medium heat, closer to high. Just check from time to time with a stick so that it doesn’t turn out that the top is already burnt and the middle is still runny. In this case, the heat needs to be reduced a little, not sharply, so that the cake does not “shrink”.

After tasting the pie with a skewer again and making sure that it is dry, we take the pastry out of the oven.

We wait until it cools down a little and remove the cake from the mold. It is convenient to turn it over onto the lid of the pan, and then from the lid onto the dish.

Cut the pie into portions - look how fluffy and fluffy it is! Sweet dough perfectly complements the sour taste of tender baked apples. Just what you need for a soulful tea party!

...What if you bake an apple sponge cake with chocolate?.. The pear chocolate charlotte turned out to be very tasty, I should try the apple version, it’s a tempting idea! 🙂

I baked this charlotte in a springform pan, greased with butter and sprinkled with crackers. And instead of soda and vinegar, I added a little soda (half a teaspoon) and a little citric acid (a pinch) to the dough. The result was a real apple sponge cake, tall and fluffy! True, the apples remained at the bottom in the form of a thin layer.

So next time I did it differently: I poured a layer of dough into the mold (about 1/3 of it), then put apples on the dough and poured the rest of the dough on top. This option turned out to be the best: the pie turned out juicy, not dry like a sponge cake, but wonderfully apple-y! And one more nuance: sprinkle the apple layer a little with cinnamon. Just a little bit, and what a scent it will be!..

I have had the opportunity to perform charlotte in different kitchens, in different states, with and without a support group... they always turn out airy. Anyone who tries this pie for the first time usually hums with pleasure and asks. Interested in trying it? Then let's begin!

We start, as usual, by beating three eggs (no need to separate the yolks from the whites - extra worries). Continuing whisking, add sugar and bring to cream color. And only after that add flour and continue beating until it becomes viscous. The dough should become as light as possible. This is...

We bake in one of two ways:

1. For a crispy crust Place the apples, cored and cut into thin slices, into a mold and fill with dough. The dough should be given a little time to fill the voids between the apples. Children love to feast on the candied crust and bring it to an indecent state, so I recommend this method for a narrow home circle.

2. To “bring the pie to light”, pour the dough into the mold and beautifully arrange apple slices on top (in circles, fans, rosettes), lightly sprinkling them with granulated sugar.

By the way, to reduce the calorie content of the pie, it is better to use a silicone mold, which does not need to be greased.

2a. For “Charlotte’s release into the big world” you need a baking sheet and a double dose of the original products. Pour the dough into the prepared baking sheet (you can’t do without oil here) and place apple slices on it, carefully row by row along long side baking tray. Usually you get 4 rows. After baking, dividing into portions is a matter of seconds. The baking sheet holds 20 good servings.

Bake the cake for 35-40 minutes at a temperature of 180-200 degrees. In a convection oven, the crust turns out a little faster at 165 degrees.

Charlotte is an all-season pie: in winter we bake it with dried apricots and raisins, in spring we add rhubarb. In the summer we bake with currants, raspberries, shadberry, blueberries and other berries (we bake according to option 1). The same delicious charlotte autumn - with plums or apples. It's high apple season now. And let the “dull time” please not only with shades of “eyes of charm”, but also with the charm of taste.

  2. Next, we need to prepare a suitable form so that the pie turns out not only tasty, but also beautiful. A mold with split edges is best suited for this. So, take a mold, put baking paper on it, and grease it well. Don't forget about the sides of the mold, they also need to be greased. There is also one little secret that housewives use: they grease everything with butter and then sprinkle with semolina or breadcrumbs. This is a matter of taste and preference. If there is no removable pan, of course you can use any other one, but some difficulties may arise during baking, especially if you are making this dish for the first time.
  3. The form is ready, which means we return to the apples. Next, cut them into small pieces and place them tightly and evenly along the bottom of the container. Some people wonder why we deal with apples first and then only dough. The answer is very simple, if you do everything the other way around, the dough may settle and lose all its appearance while waiting. Therefore, due to experience, we do just that, and our ordinary charlotte will be unusually tasty.
  4. Let's start preparing the dough itself, on which the success of our dish depends. Take a convenient container and beat the prepared eggs into it. Then, using a mixer, beat them thoroughly. Please note that there is no need to separate the yolks from the whites, which greatly simplifies the work and makes our quick recipe stand out. You need to beat the eggs for about 2 minutes, then the mass will turn out fluffy and a little bubbly.
  5. Next, add flour to our bowl of food. After this, we send the soda already quenched with vinegar. When all the ingredients are added, you need to mix, we do it confidently, but carefully so that our charming foam does not get lost and the dough remains the same high.
  6. Pour the resulting dough onto the apples laid out in the mold. To make it beautiful, take a spoon and lightly level it over the entire surface.
  7. A quick charlotte with aromatic apples is almost ready. Preheat the oven and place the mold with the dough in it and wait. As you can see, preparing charlotte with apples was not at all difficult, and it didn’t take much time. You don't have to wait long for the pie to bake, about 20 minutes. Don't set the heat in the oven low, but don't turn it on all the way either. During baking, you can safely check whether our regular charlotte is ready. We do this in the absolutely usual way, by piercing the dish with a stick or toothpick. This is necessary to evaluate the uniformity of baking of the pie. After all, it may be that the outside of the dish is covered with a golden brown crust, but the inside is still raw, in which case the fire in the oven needs to be reduced a little. But here, too, there is a little secret of the housewives: if you sharply and significantly reduce the heat, the pie may settle. I’ll start, perhaps, with the method to which I’ve become accustomed since childhood. The same one we used to learn how to cook at school. Previously, not everyone had mixers and had to beat everything with a regular whisk. Can you imagine? Well, at least progress does not stand still and now almost every housewife has electric assistants in the kitchen.

Ingredients:

  • Wheat flour - 1 cup
  • Sugar - 1 glass
  • Chicken eggs - 3 pcs
  • Apples - 2-3 pcs.
  • Salt - 1 teaspoon
  • Butter - for lubrication

Preparation:

1. Wash the apples, cut them into halves and remove the core and seeds. Then cut into cubes.

2. Now let's do the dough. Beat the eggs, then add sugar to them and beat thoroughly again with a mixer until white foam. You can also use a blender, it will turn out just as good. In general, whatever is at hand. The main thing is to beat until white fluffy foam.

To make our pie richer, tasty and not dry, try this simple option. The baked goods are more tender.

Ingredients:

  • Eggs - 4 pcs
  • Sugar – 170 gr
  • Flour - 170 gr
  • Sour cream 15-20% - 1 tbsp. with a slide
  • Baking powder - 5 g
  • Apples - 3-4 pcs.

Preparation:

1. Break the eggs into a bowl, add sugar and stir a little until smooth. Then add a spoonful of sour cream and mix well with a whisk again.

2. Then gradually stir in the flour until the dough comes together. The flour should first be sifted. Next, add baking powder and mix again.

3. Take the apples, cut them into halves and discard the cores and seeds. Cut them into large pieces. Add fruit to mixture and stir.

4. Grease a baking dish with butter, pour the dough into it and smooth it out. Preheat the oven in advance to 180-190 degrees. Then place the baking sheet there for 30-35 minutes (don't forget to check readiness with a wooden stick or toothpick).

5. When the pie is ready, remove from the oven, let cool and transfer to a towel or cutting board. The charlotte turned out golden brown, with a crispy crust. And the inside is airy and tender.

Very tasty and fluffy charlotte with apples on kefir in the oven

Here is another simple recipe for our pie. And, of course, if you do everything right, it will be very fluffy and incredibly tasty. Although, I don’t know what needs to be done to ruin such baked goods. It's all so easy.

Ingredients:

  • Kefir - 1 glass
  • Sugar - 1 glass
  • Flour - 2 cups
  • Egg - 2 pcs.
  • Refined oil - 50 ml
  • Soda - 1 tsp. (without slide)
  • Vinegar - for slaking soda
  • Apples - 3 pcs.

Preparation:

1. First, beat the eggs and sugar with a mixer until the volume increases. Pour the mixture into a deep bowl.

2. Then pour in kefir and stir. Next add the sifted flour. Stir the dough until smooth. Add baking soda, quenched with vinegar, stir again and leave to brew for 10-15 minutes. After that pour in vegetable oil and stir until it is completely dispersed. The dough should turn out like thick sour cream.

You can also use baking powder instead of quenched soda - 1 heaped teaspoon.

3. Place parchment paper in a baking pan and grease with butter. Then pour the dough into it and smooth it over the entire surface.

4. Apples can be peeled. Remove the seeds from them and cut into thin slices. Then stick them into the pie so they are evenly spaced. Now you can put the mold in an oven preheated to 180 degrees.

By the way, you can also place some of the chopped fruit first on the bottom of the baking sheet, then fill it with dough, and then place them on top.

5. Bake for about 40 minutes, then remove and let cool for 10-15 minutes. After cooling, you can remove the finished pie from the baking sheet, cut into portions and enjoy.

Step-by-step recipe for balloon charlotte with cottage cheese and apples

This method is one of my favorites, as I love everything prepared with cottage cheese. This pie turns out very tender, airy and incredibly tasty. I highly recommend trying it.

Ingredients:

  • Cottage cheese – 250 gr
  • Sugar - 180 gr
  • Eggs - 4 pcs
  • Sour cream - 3 tablespoons
  • Butter - 25 g
  • Baking powder - 10 g
  • A little butter - for lubrication

Preparation:

1. Place the cottage cheese in a deep dish, add eggs and sugar. Blend until smooth using an immersion blender (or mixer).

2. Then add sour cream and melted butter. Mix with a whisk.

3. Sift the flour through a sieve and mix with baking powder. Then combine with the curd mixture, adding gradually. Achieve homogeneity by stirring with a whisk or mixer.

4. Wash the apples, get rid of all excess and cut into thin slices.

5. Place a parchment sheet in a baking pan and grease it with oil. Then pour in the dough and smooth it out. Place fruit slices on top.

6. Preheat the oven to 180 degrees and place the pan there for about 40 minutes. It depends on its power. When the charlotte is ready, take it out and let it cool for 10-15 minutes. Then take it out of the mold and invite your household to drink tea.
