Having been studying the mushroom kingdom for decades, I am constantly amazed at its diversity and bow to the Creator - how well thought out everything is in nature! Mushrooms are the cornerstone of life, they provide everything for animals and humans - waste disposal (mushrooms decompose any organic matter), stimulation of growth and vitality (boletus under aspen trees make the tree grow actively), treatment, and nutrition. Not only that - nutrition, mushrooms contain all the analogues of culinary delights - for example, spice mushrooms, which are not only taste qualities spices, but also colossal medicinal properties! And searching for lost knowledge bit by bit, it becomes incredibly sad - how much time was lost on the dead-end option - developing synthetic drugs, when we have such a treasure under our feet, unclaimed and forgotten for a long time!

All these mushrooms that I will tell you about are known and easy to recognize, you just have to look closely. All of them are edible, medicinal and taste really great. So,

Garlic mushroom, Garlic mushroom (Marasmius scorodonius). Synonyms: garlic mushroom, mousseron, onion mushroom, cartilaginous mushroom. Distributed in the northern and central zone of the European part of the USSR, especially in the Baltic states and Belarus. Young mushrooms are whitish-yellowish on a thin brown stem (cap diameter is 2 centimeters); the caps of old mushrooms take on the shade of pottery clay. Circular insemination is characteristic of garlic mushrooms, due to which their families meet in almost regular circles. They have a distinct garlicky smell.


Garlic mushrooms retain their flavor excellently when dried, so their powder can be used throughout the year. It is extremely highly valued as a spice in Western European cooking, because its garlic aroma is very delicate and mixed with the characteristic smell of mushrooms, which naturally ennobles it. In our country, unfortunately, this inconspicuous-looking mushroom is almost never consumed.

Pepper mushroom (pepper mushroom – Chalciporus piperatus)

Its cap does not exceed 2 cm in diameter, the color is reddish-brown, copper. Very similar to goat mushrooms. But it’s difficult to confuse – it usually grows in a small group in moss or under spruce trees. The taste is truly peppery, sweetish-hot. It’s impossible to just fry it and eat it, but adding it to sauces has a completely unusual taste – pepper-mint-mushroom. In Czechoslovakia, this was one of the types of court sauces in the 18th century, with which European guests were greatly surprised.

Aromatic govorushka is used only as a seasoning in dried form. The strong anise smell completely overpowers the taste of the mushroom in a separate dish. Sometimes it is prepared in the form light snack for an aperitif. Found mainly under beech and chestnut trees. Typical for Ukraine and Western Europe– the cap is first convex, then flat with a tubercle in the center, colored blue-green. Dry cap powder is used for sauces.

Mushroom with clove aroma (Collybia dryophila)

Very early and ubiquitous, collibia grows until the autumn cold. The cap is 2-4 cm in diameter, first convex, then flat and finally depressed. Shiny skin - reddish or reddish. There is a vesicular thickening at the base. The pulp smells pleasantly of cloves and tastes sweetish. The slightly bitter taste is removed by boiling and then drying - and the powder is pure mushroom clove. This sauce was loved by Pope Pius 12.
